Oats and Almond Butter Power Bars

You will need:

1½ cups gluten-free rolled oats, blended into a flour
½ cup unsweetened/unflavored vegan protein powder
½ cup rice crisp cereal
½ cup natural almond butter
½ cup pure maple syrup
1 teaspoon pure vanilla extract
3 tablespoons mini dark chocolate chips
½ tablespoon coconut oil
¼ fine grain sea salt to taste

Start by lining an 8-inch square pan with a piece of baking paper. In a large bowl, mix the oat flour with the protein powder, rice crisp, and salt. Now add the almond butter, maple syrup, and vanilla extract and stir very well. If the mixture is dry, adjust it by adding non-dairy milk to achieve desired texture.

Pour the mixture into the pan and press evenly using a pastry roller. Stick to the fridge and chill for 30 minutes.

To make the topping, melt the chocolate chips with coconut oil over low heat. Once the chips are melted, remove from the heat and stir continuously to achieve a smooth texture. Remove the chilled batter from the fridge and cut into bars. Drizzle the melted chocolate and re-freeze.
